Garlic

In my earlier article I was talking about Pesto. Now Basil gives Pesto the Color and some of the flavor. But what I love about is the Garlic. Is Garlic a universal spice. This wonderful bulb is used in cooking on continents ranging from Europe to Asia to Africa and used in widely  different cuisines. At the moment I can not think of a Region that does not use Garlic in its recipes. But not is it tasty but they are finding many medicinal benefits to it. One of the more unusual is to a couple drops of Garlic oil in aquarium to cure some parasite and fish diseases.
Garlic also has the reputation of helping cure the cold and when it is aged and used raw it can act as a antioxidant and limit free Radicals.
But where it shines for me is it use in cooking. A ginger-soy sauce stir free is Yummy. In Italian cooking where would those red sauces be with the addition of Garlic.
In fact try this exercise go to any regions recipe list and find a culture that does not use garlic in its cooking.
